ZUCCHINI PIE 
4 c. sliced zucchini
1 c. chopped onion
1/2 c. butter
1/2 c. parsley
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano
2 eggs, well beaten
8 oz. shredded mozzarella cheese
1 pkg. crescent rolls for pie shell
2 tsp. mustard (prefer mustard honey)

Cook zucchini and onions in butter. Add seasonings. Blend eggs and cheese into zucchini. Spread crescent rolls into pie dish. Spread mustard onto pie shell. Pour zucchini in pie dish. Bake at 375 degrees for 18-20 minutes. Cook on cookie sheet, might spill over. Let stand 10 minutes before cutting. Serves 6-8.
