ZUCCHINI PIE 
4 c. thinly sliced zucchini
1 c. sliced thin onion
1/4 c. butter
2 tbsp. parsley flakes
2 beaten eggs
2 c. shredded Mozzarella cheese
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano
2 tsp. Guldens mustard
1 pie crust

Saute zucchini and onion in butter until soft. Add seasoning; set aside. Combine beaten eggs with cheese; set aside. Spread mustard on pie crust; pour zucchini, cheese, and egg mixture into pie crust. Bake at 350 degrees for 20 minutes or until done. Set 10 minutes before serving.
