RICE PIE 
1 1/2 lbs. Ricotta cheese
1 qt. milk
12 eggs
1 c. rice
1 tsp. vanilla
2 c. sugar
1 tsp. cinnamon

Cook rice until about half done. Add milk and 1/2 cup sugar, cinnamon and vanilla. Cook until done. Cool. Beat cheese and eggs together. Add rest of sugar. Mix well. Add rice mixture. Pour into a greased baking dish (grease sides as well as bottom of dish). Bake at 325 degrees for 1 1/2 hours.
