MEAT CRUST RICE PIE | |
1 1/2 lb. ground chuck 1/2 c. dry bread crumbs 1/4 c. grated onion 1/4 c. chopped green pepper (optional) 1 1/2 tsp. salt 1/8 tsp. oregano 1/8 tsp. pepper 2 cans (8 oz.) tomato sauce 1 c. water 1 1/3 c. Minute rice 1/2 tsp. salt 1 c. grated Cheddar cheese Combine meat, bread crumbs, onion, green pepper and 1/2 cup of the tomato sauce. Mix well. Pat meat mixture into bottom and sides of a greased 9 inch pie plate. Combine remaining 1 1/2 cans of tomato sauce, water, rice, 1/2 teaspoon of salt and 1/2 cup of the cheese. Spoon into meat shell. Cover with foil. Bake at 350 degrees for 25 minutes. Uncover and sprinkle with remaining cheese. Bake uncovered 10 to 15 minutes longer. To serve, cut into wedges. Serves 5 to 6. |
