RICE PIE 
1 1/2 c. cooked rice
1 tbsp. butter
2 eggs
1 c. grated cheese
1/2 c chopped onion
1 c. chopped celery
1 tbsp. oil
1 c. sliced zucchini
1 c. sliced mushrooms
1/2 c. cream
2 eggs
Salt and pepper
1 tsp. chopped mint
1 sliced tomato

Add butter and lightly beaten eggs to rice while still hot. Press into 8x8 pan and sprinkle with half of the grated cheese. Fry onion and celery in oil until tender, place in pan, sprinkle remaining cheese over. Layer zucchini and mushrooms into pie. Combine cream, eggs, salt, pepper, mint, and pour into pan. Bake at 475 degrees for 35 minutes or until pie is set. During last 5 minutes place slices of tomato on top for garnish.
