PASTA AND FOGIOLI | |
1 c. white beans 1 med. onion, chopped 1 lb. can tomatoes 3 strips bacon or hambone 1 clove garlic, chopped 1 c. macaroni Soak cup white beans overnight. Cook for approximately 3 hours or time specified on package, to thick consistency. Boil approximately 1 cup macaroni as specified on package. Fry bacon in small saucepan. Saute onion and garlic in bacon grease. Add can of tomatoes, breaking tomatoes with spoon, and macaroni. Add tomato/macaroni mixture to beans. For variety, chopped celery can be added. Also, hambone can be used while cooking beans, and later dice ham to substitute for bacon. In this case, saute onion, garlic, and celery in 2 tablespoons olive oil. There are many varieties of Italian pasta or macaroni that may be used. |
