1 tbsp. butter
1/2 c. slivered almonds
2 cloves garlic, mashed
Spray 8 or 9 inch pie plate with cooking spray. Add butter and almonds. Place in microwave on high and toast almonds until golden brown. Remove 1/2 of almonds and set aside. To the remaining almonds add garlic and stir. Lightly cook garlic mixture (just enough so garlic is not raw). Scrape white rind from brie and cut into bite size cubes. Put cubes on top of garlic and almond mixture (may be made a day ahead to this point). Microwave on high (about 3 minutes) or bake in oven 350 degrees for 10 minutes. Sprinkle with remaining almonds. Serve with champagne crackers.
