POPPY SEED DRESSING 
1 c. frozen apple juice concentrate, thawed
6 tbsp. lemon juice
6 tbsp. balsamic or red wine vinegar
4 tbsp. Dijon mustard
2 tbsp. honey
2 tbsp. olive oil
1 tsp. pepper
1 tbsp. poppy seeds

Whisk all ingredients together in a medium bowl and pour over salad greens.
