PUMPKIN PIE SQUARES 
1 c. flour
1 c. packed brown sugar, divided
1/2 c. quick oats
1/2 c. butter
2 eggs
1/4 c. chopped walnuts
1 can (16 oz.) pumpkin or 2 c. mashed cooked pumpkin
1 can (13 oz.) evaporated milk
1 tbsp. pumpkin pie spice
1/4 tsp. salt

In medium bowl mix flour, 1/2 cup sugar and oats. Cut in butter until blended. Press 1 1/2 cups mixture into 9 inch square pan. Bake in preheated 350 degree oven 12 minutes or until lightly browned.

Meanwhile in medium bowl lightly beat eggs. Stir in pumpkin, remaining 1/2 cup sugar, the milk, spice and salt until well blended. Pour over crust. Bake 30 minutes, sprinkle with remaining flour mixture mixed with walnuts. Bake 10 minutes longer or until filling is set and top lightly browned. Cool in pan on rack. Cut in 3 inch squares. Store, covered, in refrigerator. Makes 9.
