SQUASH FRITTERS 
2 c. cooked, mashed yellow squash
2 eggs, beaten
1 sm. onion, chopped
1/2 c. cracker crumbs

Combine squash, eggs, onion, seasonings, and crumbs. Mix well. Drop squash mixture by tablespoon into hot oil; cook until golden brown, turning once. 6 servings.
