AUNT JANIE'S PECAN BRITTLE | |
1 1/2 c. sugar 3/4 c. light corn syrup 1/4 c. hot water 1/4 tsp. salt 2 c. pecan halves 1 tsp. baking soda Let sugar, corn syrup, hot water and salt come to a boil in a heavy bottom saucepan. Add pecans. Cook approximately 7 minutes or until mixture is light amber. (When it spins a thread.) Remove from heat and add baking soda. Stir rapidly. Pour into a greased 10 x 14 inch pan. Let cool and break into pieces. Approximately 30 minutes. Makes about 2 pounds. (May use 2 cups of raw peanuts instead of pecans.) |
