HOMINY AND TOMATOES 
1 c. (4 oz.) shredded sharp Cheddar cheese
1 can (15 oz.) whole hominy, drained
1 can (16 oz.) tomatoes, drained & cut in pieces
1/4 c. chopped onion
1 tsp. chili powder
1/2 tsp. salt

1. Reserve 1/2 cup cheese for topping. Combine remaining ingredients in a 1 quart glass casserole. Cook uncovered in microwave oven 6 minutes at high; stir halfway through.

2. Stir vegetable mixture. Sprinkle 1/2 cup cheese over top. Cover with plastic wrap. Cook in microwave oven 1-1 1/2 minutes at medium-high or until cheese melts. About 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
