BROWN SUGAR CUSTARD 
5 eggs, slightly beaten
1/3 c. sugar
1/8 tsp. salt
1 tsp. vanilla extract
1/2 c. brown sugar
2 1/2 c. milk, scalded

Combine eggs, sugar, salt, vanilla. Add scalded milk. Butter bottoms of 8 (5 oz.) custard dishes. Put 1 tablespoon brown sugar in bottom of each one. Pour custard over brown sugar. Set cups in pan of warm water and bake at 350 degrees for 35-40 minutes or until set. Chill quickly.

To serve: Loosen edges of each custard cup with knife and invert onto a serving dish.

NOTE: To scald milk, heat until a thin skin forms on surface.

Very very good. Takes me a little bit longer to cook and for custard to settle. Maybe additional ten minutes. I love adding brown sugar into custard!

I bake it in a large glass bread pan. I add a thin layer of brown sugar to the top and broil for less than a minute to get a nice crisp Carmelized topping. Everything else is by the book, fantastic recipe!
