ZUCCHINI BREAD | |
1 c. salad oil 3 eggs, slightly beaten 2 c. sugar 2 c. grated raw zucchini 2 tsp. vanilla extract 1/4 tsp. baking powder 1 tsp. salt 3 c. all-purpose flour (or 1 1/2 c. all-purpose flour & 1 1/2 c. whole wheat flour) 1 tsp. baking soda 2 tsp. cinnamon 1 c. chopped walnuts or pecans Combine oil, eggs, sugar, zucchini and vanilla in a large bowl. Blend well. Stir in flour, soda, baking powder, salt and cinnamon. Blend, do not beat. Stir in nuts. Spoon batter into 2 well greased 8 1/2 x 4 x 1/2 inch loaf pans. Bake at 325 degrees for 1 1/2 hours. Test for doneness. |
