FROSTY STRAWBERRY SQUARES | |
CRUST: 1 c. flour 1/4 c. brown sugar 1/2 c. chopped walnuts 1/2 c. butter, melted FILLING: 2 egg whites 3/4 c. granulated sugar 1 (10 oz.) pkg. frozen strawberries (or) 2 c. fresh berries 1 c. heavy cream whipped or 14 1/2 oz. Cool Whip 2 tbsp. lemon juice Stir in bowl; flour, brown sugar, walnuts and butter. Spread evenly in 9 x 13 inch pan. Bake at 350 degrees for 20 minutes. Stir twice. Remove from oven and cool. Reserve 1/3 cup of cooked mixture for garnish. Spread remaining mixture evenly in same pan. This is the crust. In large mixing bowl; combine egg whites, sugar, berries. Beat at low speed until mixture is blended and begins to thicken, about 2 minutes. Then beat at high speed until stiff peaks form. Gently fold in whipped cream, spoon this over the crust. Sprinkle with reserved crumbs. Freeze. Cut into squares. Garnish with berries if desired. Freeze any left overs. |
