STUFFED BAKED POTATOES 
6 lg. potatoes
2 tbsp. butter
2 tsp. salt
1 c. grated Cheddar cheese
2 c. minced cooked ham
1/2 c. minced Vidalia onion
1 c. hot milk
1/8 tsp. pepper

Bake potatoes; when done, cut off a slice from the top of each potato and scoop out centers. Mash potatoes, add hot milk, butter, seasonings and cheese. Beat with an electric mixer until light and fluffy. Add minced ham and onion. Fill potato shells, piling the mixture well on top. Place potatoes on a baking pan in moderate 350 degree oven until stuffing is hot and potatoes are lightly browned, 20-25 minutes.

If the potato stuffing seems too stiff, more milk may be added. Minced parsley may be sprinkled on top of potatoes before baking, if desired.
