CORN BREAD MUFFINS 
1 c. flour
1 c. corn meal
1/4 tsp. salt
2 tsp. baking powder
1 tbsp. sugar
2 eggs or Eggbeaters
1 1/4 c. skim milk
1/4 c. oil

Add ingredients as listed; mix together, but do not beat. Spoon into muffin tins. Bake at 400 degrees for 25-30 minutes. Yields 8 to 10 muffins (or 8 x 8 inch pan).
