BROCCOLI CORN MUFFINS 
1/2 c. melted butter
1 lg. onion, chopped
1 (10 oz.) pkg. frozen, chopped and thawed and well drained broccoli
4 eggs, beaten
6 oz. cottage cheese
1 tsp. salt
1 (8 1/2 oz.) Jiffy corn muffin mix

Combine all except corn muffin mix. Stir in muffin mix. Grease muffin tins and fill approximately 3/4 full. Bake at 400 degrees for 25 minutes. Makes about 21 muffins.
