PUMPKIN CORN MUFFINS 
1 c. corn meal
1 c. whole wheat flour
1/4 tsp. salt
2 tsp. lecithin
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice
1 egg
1/4 c. molasses
3 tbsp. melted butter
1 c. buttermilk
1/2 c. canned or well drained cooked pumpkin

Preheat oven to 400 degrees and grease 12 muffin cups. Stir together dry ingredients; set aside. Combine wet ingredients including pumpkin. Add wet ingredients to dry, stirring just enough to mix. Fill muffin cups and bake 15 to 20 minutes. Cool in pan 5 minutes before serving.
