SUMMER GARDEN SPECIAL ZUCCHINI 
3-5 c. diced zucchini
1 1/2 c. soda crackers, crushed or bread crumbs
3 eggs, beaten
1/2 c. butter, melted
1/2 tsp. salt
1 (4 oz.) jar pimentos, chopped
1 c. milk
2 c. shredded cheese

Cook zucchini 5-8 minutes until barely tender. Drain. Mix all ingredients together. Pour into a 2 quart casserole. Bake uncovered in a slow 300 degree oven, about 40 minutes until brown.
