WIENER SCHNITZEL 
2 lbs. veal, cut into 1/4 inch slices
3/4 c. fresh lemon juice
Salt & pepper
2 eggs, beaten
1/2 c. flour
1 c. bread crumbs
1 1/2 c. shortening

Marinate the veal in the lemon juice for 1 hour. Remove the meat and pat the slices dry. Sprinkle the meat on both sides with the salt and pepper. Then dip the slices into the flour, then into the beaten egg and then into the bread crumbs.
