CARROT-CHEESE CASSEROLE 
1 lb. carrots
Butter
Salt and pepper
1/4 c. chopped onions
1/4 c. chopped green pepper
3-4 oz. grated sharp cheese
Seasoned bread crumbs
Butter

Cook and mash carrots and place in greased casserole. Saute onions and green peppers for 5 minutes and spread on carrots. Sprinkle cheese, then bread crumbs on top and dot with butter. Bake at 350 degrees for 30 minutes.
