Combine 1 cup graham cracker crumbs, 3 tablespoons sugar, 1/2 teaspoon cinnamon and 3 tablespoons melted butter; press onto bottom of 9-inch springform pan. Bake at 350 degrees for 10 minutes. Set aside to cool. Combine 2 (8 ounce) packages softened cream cheese and 1/2 cup sugar; beat at medium speed until well blended. Add 2 eggs, 1 at a time, mixing well after each. Blend in 1/2 teaspoon vanilla. Pour into crust. Toss 4 cups thin peeled apple slices with 1/3 cup sugar and 1/2 teaspoon cinnamon. Spoon over cheese filling. Sprinkle with 1/2 cup chopped pecans. Bake at 350 degrees for 1 hour and 10 minutes. Loosen cake from rim of pan and cool.
