BRANDIED APPLE CHEESECAKE 
4 apples, peeled, cored & sliced
1/2 c. blackberry brandy
1/2 c. sugar
8 cinnamon graham crackers
3 tbsp. butter
2 (8 oz.) pkgs. cream cheese, softened
2/3 c. sugar
3 eggs

Mix brandy and 1/2 cup sugar. Pour over apples. Stir to coat. Set aside.

Crumb crackers and butter in food processor. Reserve 4 tablespoons. Press remaining crumbs into the bottom of an 8" or 9" springform pan. Chill.

Whip cream cheese. Mix in 2/3 cup sugar, eggs and 1 tablespoon brandy liquid from apples. Pour filling into crust. Drain apples, reserving brandy. Press apple slices gently into filling. Sprinkle with reserved cracker crumbs and 4 tablespoons of brandy liquid. Bake at 350 degrees for 1 hour. Chill before serving.
