BAKED FISH & RICE 
1-2 lbs. white fish, any kind
6-10 Ritz crackers, crushed fine
Parmesan cheese
1/4 c. melted butter
Garlic salt (opt.)
2 tbsp. minced onion
1/2 tsp. minced garlic
2 1/2 tbsp. butter
1 c. uncooked long grain rice
2 1/2 tbsp. butter
1 1/2 c. chicken broth
3 sprigs dried or fresh parsley
1/4 tsp. dried thyme (opt.)
1/2 of a bay leaf, crushed

Place fish in baking dish. Spread crackers over top and sprinkle with cheese to taste. Pour melted butter over top and sprinkle with garlic salt if desired. Bake at 325 degrees for 20 minutes. For rice, add onion and garlic to half of melted butter in skillet. Add uncooked rice. Stir in broth and herbs; cover with tight fitting lid and cook for 17 minutes. Stir in remaining butter. (May bake in oven if desired.) To serve, put fish on bed of rice and garnish with more parsley sprigs.
