PLANTATION SOUP 
1/2 c. carrots (diced)
1/2 c. onions (diced)
1/2 c. celery (diced)
1/4 c. butter
3 1/2 c. chicken broth
1 2/3 c. instant potatoes
1 c. milk
2 tbsp. cream
1/2 tsp. lemon juice

Saute carrots, onions and celery in butter. Add broth. Bring to a boil, lower and simmer 15 minutes. Stir in potatoes, milk, cream and lemon juice last.
