WESSON FRUIT CAKE 
1 c. Wesson oil
1 1/2 c. brown sugar
4 eggs
2 tsp. allspice
2 tsp. cinnamon
1 tsp. ground cloves
2 tsp. salt
1 tsp. baking powder
3 c. flour
1 c. fruit juice
1 c. chopped figs
1 c. raisins
1 c. shaved citron
1 c. chopped candied pineapple
1 1/2 c. candied cherries
3 c. nuts

Mix Wesson oil, sugar, egg yolks and beat for 2 minutes. Sift spices, salt, baking powder and 2 cups of flour and add alternately with fruit juice to first mixture. Add fruit, nuts mixed with remaining flour. Fold in egg whites beaten stiff. Bake 4 hours in slow oven, 275°F.

Makes 5 1/2 pounds.
