OVEN ROUX 
1 (3 lb.) can Crisco shortening
1 (5 lb.) bag flour

Preheat oven to 350 degrees. Melt Crisco in heavy pot on top of stove. Remove from heat and add flour until it makes a real thick paste. Place in oven, stir every 30-45 minutes. Cook until roux is a dark golden brown. Remove from oven and let set until able to put in clean coffee cans. Store in refrigerator or freezer until ready to use.
