CAULIFLOWER AUGRATIN 
6 tbsp. butter
1 to 2 cloves garlic minced
4 oz. cooked ham, chopped
1 head cauliflower, broken into florets
2 tbsp. all-purpose flour
1 1/2 c. whipping cream
1/4 tsp. salt
Pepper to taste
Pinch of cayenne pepper
1 1/2 c. Swiss cheese, shredded
2 to 3 tbsp. fresh parsley, chopped

Melt butter in large skillet. Saute garlic and ham for 2 minutes. Add cauliflower and cook until crisp-tender. Combine flour and cream; stir into skillet and blend well. Add salt, pepper and cayenne pepper. Cook and stir 1 minute more. Pour into a 2-quart baking dish. Sprinkle with cheese, place under a preheated broiler for 2 to 4 minutes or until lightly browned. Sprinkle with parsley and serve immediately. Makes 6 to 8 servings.
