BROCCOLI BURRITOS 
10 flour tortillas
2 (1 lb.) bunches fresh broccoli, coarsely chopped
1 1/2 c. shredded Monterey Jack cheese (6 oz.)
1 lg. tomato, finely chopped
3/4 c. chopped onion
1 (8 oz.) can tomato sauce
1 (8 oz.) carton commercial sour cream
Fresh parsley (optional)

Wrap tortillas tightly in foil; bake at 350 degrees for 15 minutes. Combine broccoli, cheese, tomato and onion; spoon mixture evenly in center of each tortilla. Roll up each tortilla; place seam side down in a lightly greased 12 x 8 x 2 inch baking dish. Top with tomato sauce. Cover dish and bake at 350 degrees for 45 minutes. Spread sour cream over top, garnish with parsley, if desired. Yields 10 servings.
