MOCHA TRUFFLE COOKIES 
1/2 c. butter
1/2 c. semi sweet chocolate pieces
1 tbsp. instant coffee crystals
3/4 c. brown sugar
2 eggs
2 tsp. vanilla
2 c. flour
1/3 c. unsweetened cocoa powder
1/4 tsp. salt
1 c. semi sweet chocolate pieces

In large saucepan melt butter and the 1/2 cup chocolate pieces over low heat. Remove from heat. Stir in coffee, cool 5 minutes. Stir in sugar, eggs and vanilla. In medium mixing bowl combine flour, cocoa powder, baking powder and salt. Stir into coffee mixture. Stir in the 1 cup chocolate pieces. Drop dough by rounded teaspoon onto lightly greased cookie sheet. Bake at 350 degrees for 10 minutes.
