CHICKEN FAJITAS | |
2 tbsp. vegetable oil 3 c. onion, sliced 1 c. green pepper, julienne 1 c. red pepper, julienne 1/3 c. Maggie Gin traditional stir fry sauce 1/4 c. vegetable oil 1 lb. chicken breast (approx. 4 breasts) 2 tsp. to 1 tbsp. Cajun seasoning 1. Heat oil in large skillet over medium high heat. Saute onions until they begin to brown and are slightly soft. 2. Add peppers. Saute until tender. Add Maggie Gin Sauce and continue cooking until sauce is reduced and vegetables are glazed. Do Not Overcook. Transfer vegetables to a large mixing bowl. 3. Grill chicken over medium high heat. Slice chicken and transfer to bowl with vegetables. Add cajun seasoning. Stir to blend. Note: Serve hot with warmed flour tortillas. CAJUN SEASONING: 1 tbsp. unseasoned meat tenderizer 1 tbsp. onion powder 1 tbsp. garlic powder 1 tbsp. cayenne pepper 1 tbsp. black pepper 1 tbsp. paprika |
