SPINACH CASSEROLE 
2 pkg. frozen chopped spinach, cooked and drained
2 eggs, beaten
1 lg. onion
1 can cream of mushroom soup
1 c. extra sharp grated Cheddar cheese
1/2 c. sour cream
2 tbsp. mayonnaise
2 tbsp. melted butter
1/2 c. bread crumbs

Mix all the ingredients except the bread crumbs and butter and place in a large buttered (or sprayed with Pam) casserole. Toss the bread crumbs with melted butter and sprinkle across top of casserole. Bake uncovered at 350 degrees for 45 minutes.
