MEXICAN CASSEROLE 
12 thin slices ham
12 tortillas
1 lb. jack cheese
1 can of chilies
Cheese sauce
Paprika

CHEESE SAUCE:

1/4 lb. butter
1/2 c. flour
1 qt. milk
3/4 lb. grated cheddar
1 tsp. prepared mustard
1/2 tsp. salt
Dash of pepper

Melt butter and blend in flour. Add milk, grated cheese, mustard, salt, and pepper. Cook and stir until smooth.

Cut cheese and green chilies into 1/2 inch strips. Place one sliced of ham on each tortilla. Put one stick of cheese in center of ham sliced and top with strip of chili. Roll tortillas and secure with wood picks. Place rolled tortillas, slightly separated, in a greased 13 x 9 inch baking pan. Pour cheese sauce over to cover tortillas. Sprinkle with paprika and bake at 350 degrees for 45 minutes. Makes 6 servings.
