SHRIMP SCAMPI | |
6 tbsp. butter 1 tbsp. olive oil 1 tbsp. green onion 4-5 cloves minced garlic 2 tsp. lemon juice 1/4 tsp. salt 1/4 tsp. lemon peel 1 tbsp. parsley 1 tbsp. Italian bread crumbs 1 lb. shrimp, peeled and deveined Melt butter over medium heat. Add oil. Stir in onion, garlic, lemon juice and salt. Cook until bubbly. Add shrimp to pan and cook. Stir occasionally until shrimp turns pink, about 5 minutes. Add lemon peel, parsley, and bread crumbs. Turn into serving dish and garnish with lemon wedges. Serve over rice or linguini. |
