OATMEAL NUT COOKIES | |
1 1/2 c. sifted all-purpose flour 1 tsp. baking soda 1 tsp. salt 1 c. shortening 3/4 c. granulated sugar 3/4 c. light brown sugar 2 eggs 1 tsp. vanilla 2 c. raw quick cooking oats 1 c. coarsely ground pecans or walnuts Preheat oven and lightly grease cookie sheets. Sift dry ingredients together. In large bowl, cream shortening, sugars, eggs and vanilla until light and fluffy. Stir on flour and oats until well combined. Stir in nuts. Drop by teaspoonfuls 2" apart, decorate top with nut, if desired. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Let stand 1 minute before removing from cookie sheets. Makes about 6 dozen. |
