FIT 'N FIBER MUFFINS 
2 eggs, beaten
1 1/3 c. milk
1/4 c. honey
1/4 c. oil
1/4 c. onion, finely chopped
1 c. whole wheat flour
1 c. cornmeal
4 tsp. baking powder
1/2 tsp. salt
1/4 c. sunflower seeds, shelled

In a medium mixer bowl, combine eggs, milk, honey, oil, and onion. Add flour, cornmeal, baking powder, and salt. Stir until moistened. Batter will be very thin. Spoon into well greased on paper lined muffin cups two-thirds full. Sprinkle with the sunflower seeds. Bake at 400 degrees for 18-20 minutes. Yield 12-18 muffins.
