BAKED STUFFED SHRIMP - SERVES 4 
3 tbsp. finely chopped bay scallops
2 oz. chablis wine
2 c. cracker meal
1 tbsp. paprika
2 tbsp. finely crushed potato chips
2 tbsp. Parmesan cheese
2 tbsp. melted butter

Split shrimp through center. Stuff with mixture. Place in pan with a little water - this prevents shrimp from drying. Bake 20 minutes at 325 degrees. This is enough to stuff 12 jumbo shrimp. (4 to 6 inches long)
