BRAN MUFFINS 
3 c. bran flakes
1 c. boiling water

Mix in large bowl and let stand.

2 eggs
1 c. honey
2 c. buttermilk
1/2 c. corn oil

Beat in large bowl and add to bran.

2 c. whole wheat flour
1/2 c. soy flour
2 1/2 tsp. baking soda
1/2 tsp. salt

Sift, combine and fold into bran. Bake at 375 degrees for 15-20 minutes in greased muffin tins or paper cups. Makes 30 muffins.
