RHUBARB CRUMBLE 
1 c. flour
1 c. brown sugar
1/2 c. melted butter
3/4 c. oatmeal
1 tsp. cinnamon
1 c. sugar
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla
4 c. rhubarb, cut in 1/2 inch pieces

Mix flour, brown sugar, melted butter, oatmeal, and cinnamon until crumbly. Press half of this mixture onto bottom and part way up sides of greased 13 x 9 inch pan. Sprinkle rhubarb evenly over bottom. In saucepan, combine sugar, cornstarch, water and vanilla. Heat to boiling; cook and stir until thickened, about 1 minute. Pour over rhubarb, top with remaining crumb mixture. Bake in 350 degree oven about 45 minutes. Serve warm or cold with cream or ice cream.
