RHUBARB CRUMBLE 
1 c. flour
1 c. sugar
1 c. quick oats
1/3 c. melted butter
3 c. diced rhubarb
1/2 tsp. cinnamon
1 tbsp. water

Save 1 tablespoon flour for rhubarb. Combine remaining flour, 1/2 the sugar and the oats. Stir in butter until mixture is crumbly. Press 1/2 mixture over bottom and sides of a 9 inch pan. Combine rhubarb, 1/2 cup sugar, 1 tablespoon flour, cinnamon and water. Spoon mixture into crust. Sprinkle remaining flour and oat mixture over fruit. Bake in 350 degree oven until rhubarb is tender and crust lightly brown. Approximately 45 minutes.
