ORANGE PRALINE YAMS 
2 (40 oz.) cans yams, drained
2/3 c. orange juice
5 tbsp. brandy
4 tbsp. unsalted butter, melted
1/3 c. light brown sugar
1 tbsp. grated orange rind
Pepper
3 egg yolks

TOPPING:

1 c. chopped pecans
2/3 c. light brown sugar
1/2 c. unsalted butter, melted
1 tsp. cinnamon

Cut yams into thick slices. Preheat oven to 350 degrees. Butter an 11"x7" baking dish. In a bowl beat the yams with a mixer until smooth. Add remaining ingredients and beat 1 minute. Spoon into baking dish. Stir the topping ingredients together. Spread over yams. Bake 45 minutes until golden brown and bubbly. Remove and let stand 10 minutes. 10 to 12 servings.
