CHICKEN BREASTS DIANE 
4 lg. chicken breasts, boned and cut in half
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsp. salad oil
2 tbsp. butter
3 tbsp. fresh chopped green onion
Juice of 1/2 lemon
2 tbsp. brandy
3 tbsp. chopped parsley
2 tsp. Dijon mustard
1/4 c. chicken broth

Place chicken breast between sheets of waxed paper. Pound slightly. Sprinkle with salt and pepper. In a microwave-safe dish melt butter and mix with oil. Coat chicken breast on both sides. Cook at high power 3 minutes; let rest 1 minute. Turn breast. Cook 3 minutes at high power or until done.

Mix sauce, chives, green onions, lemon juice, mustard, brandy and parsley. Microwave at high power 1 minute. Add juice and stir. Pour over hot chicken. Serve with noodles.

Since microwave ovens vary in power, you may need to adjust your cooking time.
