WHITE TEXAS CAKE 
1/2 c. shortening
2 c. sugar
2 egg whites
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 3/4 c. buttermilk
1 tsp. vanilla
1/2 tsp. almond extract

Cream shortening, sugar. Add unbeaten egg whites. Mix flour, soda, salt and add to the creamy mixture. Add butter milk and flavorings, pour into greased and floured cookie sheet. Bake at 350 degrees for 20 minutes. Cool cake and frost.

ICING:

1 stick butter
1 tsp. vanilla
1 1/2 c. coconut
1/3 c. buttermilk
1 lb. powdered sugar
1 1/2 c. chopped pecans

Melt butter and add rest of ingredients, mix well and spread on cake.
