FLOUNDER ROLL-UPS 
6 fillets of flounder
1/2 c. scallops, shrimp or lobster meat, chopped fine
1/3 c. vegetable oil
1 tbsp. minced onion
1/2 tbsp. minced parsley
Grated Parmesan cheese
Juice of 1 lemon
20 Ritz crackers, crushed
3 tbsp. melted butter

Preheat oven to 350 degrees.

In medium sized frying pan, saute scallops, onion, parsley in oil for 1 minute, stirring constantly. Remove from heat and mix in cracker crumbs.

Divide dressing equally, spreading evenly over fillets. Sprinkle with grated cheese and a few drops of lemon juice. Roll each fillet, jelly roll fashion and secure with toothpicks. Brush each with melted butter.

Place on cookie sheet. Cover lightly with foil and bake for 10 minutes. Remove foil and cook 10 minutes more, or until fish flakes easily when touched with fork. Serve immediately.
