COCONUT LAYER CAKE 
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
2/3 c. butter
1 1/2 c. sugar
3 eggs, separated
2/3 c. milk
1 tsp. vanilla
2 c. shredded coconut

Sift flour, powder and salt together three times. Cream butter; add sugar slowly until light and fluffy. Add egg yolks, one at a time, mixing well after each yolk. Add flour and milk in small amounts, beating after each additional egg until smooth. Add coconut and vanilla; mix well.

Beat egg whites until they will hold up in a moist peak. Stir quickly into batter. Bake in 375 degree oven in two 9-inch layer pans. Bake for 25 minutes or until done. When cooled somewhat, put one on top of the other.
