MONSIGNOR'S PEPPER STEAKS
1 lb. sirloin or round steak
2 tbsp. olive oil
1/4 c. chopped onion
1 clove garlic, chopped
1 tsp. salt
1 dash pepper
1 beef bouillon cube
1 c. hot water
1 (1 lb.) can stewed tomatoes
1 lg. green pepper, sliced
1/4 c. cold water
2 tbsp. cornstarch
2 tbsp. soy sauce

Cut meat into small strips. Brown meat slowly in hot oil (about 1 5 minutes). Add the onion and garlic the last few minutes. Season with salt and pepper.

Dissolve bouillon in a cup of hot water. Add to the meat. Cover and simmer until the meat is almost tender (20-25 minutes). Add tomatoes and green peppers and cook 10 minutes longer. Combine remaining ingredients and stir into the meat. Bring to a boil, stirring constantly for 5 minutes longer. Serve over rice. Yields 4 servings.
