BROCCOLI BLEU CHEESE CASSEROLE 
2 (10 oz.) pkgs. frozen broccoli spears
2 tbsp. softened butter
2 tbsp. flour
1/2 c. milk
1/2 c. half & half
1/4 tsp. salt
1/8 tsp. pepper
1 (3 oz.) pkg. cream cheese, softened & cubed
1/2 c. (2 oz.) bleu cheese, crumbled
1/2 c. seasoned croutons

Cook broccoli in small amount of boiling water until crisp and tender. Drain and coarsely chop. Set aside.

Melt butter in heavy saucepan over low heat. Add flour until smooth. Cook 1 minute, stirring constantly. Gradually add milk and half and half. Cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add salt, pepper, cream cheese and bleu cheese. Stir until cheese melts. Add broccoli. Stir gently. Spoon into greased 10"x6" baking dish. Cover and refrigerate. Remove from refrigerator and let stand 30 minutes. Sprinkle with croutons. Bake, uncovered for 25 to 30 minutes at 350 degrees.
