CREAM OF CAULIFLOWER SOUP 
1/3 c. green onion (tops only)
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
2 c. chicken broth
1 pkg. frozen cauliflower, thawed and chopped
2 c. milk
1 1/2 c. shredded cheddar cheese
1 tbsp. minced chives

In sauce pan, sauté onions in butter until tender. Stir in flour and salt until blended then gradually add broth. Bring to a boil, cook and stir 2 minutes or until thickened.

Lower heat, add cauliflower and simmer 2 minutes. Add milk and cheese, cooking until cheese is melted. Garnish with chives.
