MYRTLE'S GUMBO DELIGHT 
4-5 cleaned crab
2-3 lbs. cleaned & deveined shrimp
2 lbs. cut smoke sausage
1 c. celery, finely chopped
1 c. onions, finely chopped
1 c. bell pepper, finely chopped
1/3 c. parsley, finely chopped
3 cloves chopped garlic
2 c. okra (with slime fruit out)
2 lbs. chicken wings, seasoned & fried (no flour)
2 c. flour
3/4 c. oil
1 tsp. file'

Put 2 quarts of water in medium or large stock pot, add sausage and let simmer slowly for 30 minutes. Saute celery, onions, pepper, garlic and parsley in 1/4 cup oil; add to stock pot and let simmer for 10 minutes. Brown roux (gravy) which is 2 cups flour in 3/4 cup oil and add to stock pot. Add fried chicken wings and okra. Add file', salt and pepper to taste. Simmer for 30 minutes. Add crab and shrimp. Add more water if desired. Optional: Oysters and crab boil bag can be added if desired.
